Raw Broccoli Cucumber and Pomegranate Salad

Raw Broccoli Cucumber and Pomegranate Salad makes a refreshing accompaniment and so easy to put together. What I love about this dish is its vibrant colours.
  • 1 broccoli
  • 1-inch ginger, grated finely
  • ½ lemon, juice and zest
  • 1 cucumber, sliced
  • 1 shallot, chopped
  • ½ pomegranate, seeded
  • pinch of salt
  • pinch of pepper
  1. Grate the broccoli into a large mixing bowl. Toss in the ginger and lemon, juice and zest. Combine well.
  2. Toss in the remaining ingredients.
  3. Serve.
