Pea Cannellini Bean Sauce

Pea Cannellini Sauce is one of my simpler dishes. I use butter beans/cannellini beans and roasted garlic for this Pea Cannellini Sauce. Marjoram, lime juice and a sprinkle of green peppercorns just lift the sauce. I prefer the peas to remain raw with the pasta slightly heating them up.

Ingredients

  • 50g butter beans soaked in water overnight
  • 50ml retained butter bean water
  • 500g podded peas (makes about 200g deshelled peas)
  • ½ lime, juice
  • 1tbs marjoram
  • 4 or 5 cloves of garlic, plus oil for drizzling
  • 3tbs oil
  • Season to taste
