What Inspired Me:

My love affair with Cherry Chia Seed Pudding began when I discovered chia seeds at the local health food store. I was already familiar with basil seeds, but chia seeds offered a creamy alternative that was perfect for a sweet and tangy pudding.

Cherry Chia Seed Pudding

Nutrition facts: 200 calories 20 grams fat

Ingredients

  • 400g Cherries
  • 400ml coconut milk
  • 50g Chia seeds

Instructions

  1. Place the coconut milk in a large bowl.
  2. Add the Chia seeds and combine well. Set to one side for about an hour.
  3. Roughly chop the cherries.
  4. Layer the Chia seeds and cherries in layers in serving glasses and refrigerate until ready to serve.
