What inspired me:

I created this recipe by wanting to elevate the humble roasted carrot to a new level of flavour and excitement. I experimented with combining the natural sweetness of carrots with the richness of maple syrup, the crunch of sesame seeds, and the pungency of garlic. The result is a dish that’s not only nourishing but also visually stunning and tantalisingly delicious.

Roasted Carrots

Nutrition facts: 200 calories 20 grams fat

Ingredients

  • 500g carrots
  • 4tsb maple syrup
  • 6tsb extra virgin olive oil
  • 3 cloves of garlic, minced
  • 1tbs sesame seeds

Instructions

  1. Preheat oven to gas mark 180 degrees Celsius.
  2. Peel the skin and cut the carrots into diagonal chunks. Place in a baking tray.
  3. Mix the maple syrup, olive oil and minced garlic. Coat the carrots.
  4. Roast the carrots for about 10 minutes. Toss over the sesame seeds and continuing baking for a further 30 minutes.
  5. Serve immediately.
