Sweet fruity tart cherries in slightly crunchy smooth coconut pudding like-texture; raw Cherry Chia Seed Pudding.

Knuckle down and take a swig at something lush and soft

This dish will eradicate any myth that vegan food can be so deliciously simple to make.

Make this:

  • When a snack that is high in fibre and protein makes way for the most scrumptious mid-day treat. Oh go on then….
  • When you’ve only got 10 minutes to rustle up dinner for guests who’ve just “popped in” – a sweet-tart creamy cherry dish will give you that guilt-free feeling
  • When the only choice for a healthy, chilled make-ahead brekkie is this dish. Packed with nutrition, it’ll get you ahead of the curve as you face the day

Chia Seed Pudding was inspired when discovering chia seeds at the local health food store. I was already familiar with basil seeds but chia seeds offered a suitable creamy alternative – and, when plump offers an exquisite appeal.

Cherry Chia Seed Pudding is an ideal for breakfasts and can be made the night for consumption in the morning, when you have to rush out of the door of a morning. Cherry Chia Seed Pudding is easy to put together.

This pudding is raw, vegan and paleo.

Cherry Chia Seed Pudding

Nutrition facts: 200 calories 20 grams fat

Ingredients

  • 400g Cherries
  • 400ml coconut milk
  • 50g Chia seeds

Instructions

  1. Place the coconut milk in a large bowl.
  2. Add the Chia seeds and combine well. Set to one side for about an hour.
  3. Roughly chop the cherries.
  4. Layer the Chia seeds and cherries in layers in serving glasses and refrigerate until ready to serve.
