- 1 broccoli
- 1-inch ginger, grated finely
- ½ lemon, juice and zest
- 1 cucumber, sliced
- 1 shallot, chopped
- ½ pomegranate, seeded
- pinch of salt
- pinch of pepper
- Grate the broccoli into a large mixing bowl. Toss in the ginger and lemon, juice and zest. Combine well.
- Toss in the remaining ingredients.
