Split Pea Sweet Potato Curry

I attended a Vegan event recently - and this dish finished within a few minutes! Not sure why? Split peas are high in protein which is a must for vegans.

Serves: 8
  • 3 tablespoons of walnut oil
  • 4 gloves of garlic
  • 200g split peas - soaked for 48 hours, washed and drained regularly
  • 200g sweet potatoes
  • 50g potatoes
  • 1 can tomato tin
  • 200ml of filtered water
  • 1 tsp cumin powder
  • 1 tsp coriander powder
  • 1 tsp curry powder
  • Season to taste
  1. In a large pan, add the walnut oil, garlic, cumin, and coriander and curry powders. Cook the garlic softens. Add a teaspoon of water.
  2. Add the split peas, tomatoes and water. Cook for about 1 and a half hour.
  3. Add the sweet potatoes and potato and cook for a further 20 minutes.
  4. Season to taste.
